If you’ve never reserved a Thanksgiving turkey directly from a local farm before, the process may feel a little different from picking up a frozen turkey at the grocery store.

Whether you’re ordering your first farm-fresh Thanksgiving turkey or continuing a family tradition, here’s what you can expect when reserving your bird from Spring Valley Turkey Farm.

Step 1: Choose the Approximate Turkey Size You Need

The first step is deciding approximately how large of a turkey you’ll need for your Thanksgiving dinner.

Spring Valley whole turkeys generally range from approximately 12 pounds to 30+ pounds, making it possible to accommodate everything from a smaller family dinner to a large Thanksgiving gathering.

As a general guideline, planning for approximately 1 to 1½ pounds of turkey per person gives you enough for dinner with some room for leftovers.

Once you know roughly how many people you’re serving, you can select the weight range that best fits your gathering.

Why Can’t We Guarantee an Exact Turkey Weight?

This is one of the biggest differences between reserving a turkey from a farm and selecting a packaged bird from a supermarket freezer.

Our turkeys are living, growing birds.

That means we cannot know months in advance exactly how much an individual turkey will weigh once it is ready for Thanksgiving.

When you place your reservation, you’ll choose an approximate weight range. Because natural growth varies from bird to bird, we ask customers to allow approximately one pound of variation in either direction.

That slight variation is simply part of purchasing a farm-raised Thanksgiving turkey.

Step 2: Reserve Your Whole Turkey Online

Once you’ve selected your desired size range, you can reserve your turkey directly through our website.

Reservations are available for whole Thanksgiving turkeys, and customers place a deposit when completing their reservation.

Turkey breasts, legs, thighs, backs and wings may also be available during Thanksgiving week, but those items are walk-in only and available on a first-come, first-served basis.

If you know you want a whole turkey for Thanksgiving, reserving ahead is the best way to secure one.

Step 3: Your Turkey Continues Growing Until Thanksgiving

Unlike a frozen supermarket turkey that may have been processed well in advance of the holiday, Spring Valley turkeys continue growing throughout the season.

That’s another reason we reserve birds by approximate weight range rather than exact pound.

Our Broad Breasted White turkeys are raised here in Old Bridge with ample space and cared for by a small farm team throughout the season.

When Thanksgiving gets closer, the birds are processed at a nearby USDA facility only days before the holiday.

Step 4: Your Thanksgiving Turkey Is Fresh, Not Frozen

One of the biggest reasons customers choose Spring Valley Turkey Farm is freshness.

Our Thanksgiving turkeys are sold fresh and deep-chilled rather than frozen solid.

According to the USDA Food Safety and Inspection Service, raw poultry labeled “fresh” has never been held below 26°F.

That distinction matters.

A large frozen turkey can require several days to thaw safely in the refrigerator. USDA recommends allowing approximately 24 hours for every four to five pounds when thawing a whole turkey in the refrigerator. Because you’re picking up a fresh Spring Valley turkey, you can skip that long frozen-turkey thawing schedule.

A Little Ice Does Not Mean Your Turkey Was Frozen

Customers are sometimes surprised to see a little ice inside the cavity or around the joints of a fresh turkey.

That can be completely normal.

Fresh poultry is kept extremely cold for food safety, and Spring Valley turkeys are deep-chilled after processing. A small amount of ice can form even though the bird has not been frozen solid.

So if you notice a little ice when you bring your turkey home, there is no need to assume you received a frozen bird.

Step 6: Keep Your Fresh Turkey Properly Refrigerated

Once you bring your turkey home, proper refrigeration is important.

USDA recommends storing fresh poultry in a refrigerator maintained at 40°F or below.

Because Thanksgiving pickup occurs shortly before the holiday, follow the storage guidance provided at pickup and keep your turkey properly chilled until you’re ready to prepare it.

Step 7: Cook Your Thanksgiving Turkey Safely

When Thanksgiving Day arrives, use a food thermometer rather than relying only on cooking time or the appearance of the turkey.

USDA recommends cooking whole poultry to a minimum internal temperature of 165°F, checking the innermost part of the thigh and wing and the thickest part of the breast.
